Grain-free pasta night!

Moose pasta

Moose pasta

Take just about any ground meat, combine it with some homemade tomato sauce, and add it to some Banza noodles and you have a delicious pasta meal. Banza noodles are made from chickpeas. While they’re not very low carb they are higher in fiber and protein than grain based pastas and taste just as good. I find that I feel better after a bowl of Banza based pasta than I do after typical grain pastas. I also make my own pasta sauce.

For the sauce I start with a base of canned tomato paste and add water until it reaches a sauce consistency. I’ll then usually add oregano or basil with a dash of black pepper and a pinch of salt. Toss in some mushrooms or onions to taste.

Brown whatever meat you have on hand in a cast iron skillet.

I like cooking my Banza noodles in the pressure cooker. I’ve been following this guide and it works well.

Above is ground moose meat and Banza shells in tomato sauce with a couple pats of Kerrygold butter to add some healthy fat.
